As those who have been lucky enough to meet Souheil Khouryalready know, he is truly passionate about baklava. "The baklava has a great story to it. How long do you have, because I could go on about it for days!" says Souheil, a Quebecker who was born in Syria and began making these small Middle Eastern pastries more than 35 years ago. "I did my thesis on the baklava!"
An eccentric and above all charming entrepreneur, Souheil can talk for a thousand and one nights about the famous baklava and how the Greeks and Syrians have constantly disputed its origins throughout history. But in fact, the sweet treats didn't originate in either country! The word is Turkish and simply means "pastry", which explains why there are hundreds of different variations of these small desserts made with nuts, filo pastry, sugar and ghee.
