It's out of a desire to change things up that Devin De Sousa and partner Echo Jade Vergil have put the management of their restaurant, Fabergé, aside to embark on an ambitious project: Marché des Éclusiers, the creation of a platform somewhere between a market and shop that showcases local producers.
